Pecan Biscuits
Ingredients:
125g (4oz) pecan nuts
60g (2oz) butter
1/2 cup icing sugar
1 teaspoon vanilla
1/2 cup plain flour
Directions:
Finely chop quarter of the nuts, reserve remainder. Cream butter with sifted icing sugar and vanilla until light and fluffy, and the chopped pecan nuts, stir in sifted flour in two lots. Use floured, hands to roll level teaspoonfuls of mixture into balls, place balls 2.5cm (1in) apart on lightly greased oven trays. Bake in moderate oven 10 minutes, or until light golden brown. Cool on trays. Dust with icing sugar before serving. Makes about 30.
